The Craft

Smashed when you order. Not before.

Your burger doesn't exist until you ask for it. The patty hits the hot flat-top, gets smashed hard for a thin, crisp, lacy edge, and comes off seconds later with grilled onions folded in. Then it's wrapped hot and handed over — that's the whole system, and it's why the line moves fast and the food never sits.

We're in the Downtown corridor, minutes from Fremont Street and a world away from the resort towers. Casino crews, nurses coming off shift, rideshare drivers, the 2 AM crowd — this side of town runs around the clock, and so do we.
